The device for separating meat from the bones of poultry legs consists of a base, working bodies (hollow cylinders with conical grooves), a manual drive, an epiphyseal separation unit and a system of ejectors. A distinctive feature of the device is the ability to debon both whole legs and legs divided into thigh and drumstick. This device is compact and small in size. The device is serviced by one person who manually inserts the leg with the ends of the bones (with previously removed epiphyses) into the conical grooves of the internal cavities of the working cylinders. Then, by rotation of the drive handle, one of the hollow cylinders is set in motion, moving towards the other cylinder. In this case, the femur and leg bones enter the internal cavities of these cylinders, shifting the muscle tissue towards the knee joint. When the working cylinders close, the tubular bones are completely in their internal cavities, the knee joint - in the cavity formed by the conical grooves of the cylinders, and the muscle tissue remains on the outer surface of the cylinders. With further movement, both cylinders enter the guide of the second cylinder until the rupture of the ligaments between the muscle tissue and the knee joint by the end surface of the guide. By rotating the drive handle in the opposite direction, the working cylinders return to their original position, muscle tissue and bones are unloaded from the device.
